I saw this video today and had to share it... the words make me smile.
Of course, everything reminds me of the reunion we'll have in just 18 days.. but who's counting?

I can't wait for him to come HOME!

ENJOY!

Wednesday's with Wade Week 21 in Kabul

Well it's been a month or so since I grabbed a few minutes to write.  It has been extremely busy and time is flying by.  Both are good things since it gets me closer to leaving.  I am under the 30 day mark for returning home, or pretty close to 30.  As I look forward to going home, I can't help but get a little choked up, since I will be with the people that I love the most.

I hope that everyone had a good Christmas and have started off to a Happy New Year.  I know that for the Nordberg Family, 2011 is going to be filled with a lot of excitement and adventure.

Take Care

First Day Back

This child spent every single day of the Christmas Break outside playing with his friends.
He would literally run out after breakfast and make me hunt him down so he could eat dinner with us... and sometimes, he'd go right back out again!
But somehow, today, with him back in school, I am missing him terribly!
Like really, really missing him!
Like,  lump in my throat, missing him!

I am not worried about him; I know God has great plans for him, but I don't love change, and this is BIG... and despite my best efforts to keep him my "little" boy,  so is he!
even if he still rocks a "frosting mustache"
Ok, now I can't see through my tears...I better go hug the two I have that are still little!

Taco Roll

Ok, so all of you know that I am not a cook, and this is not a cooking blog...
this is a special post for Big Will and Lor-Lor on " How to make Taco Roll".

These are the ingredients you'll need:
2 cans crescent rolls,
1 1/2 lbs. ground beef
1 c. cheese,
taco seasoning mix
side of your choice
.... that's it!
Cook the meat until brown and follow directions on taco seasoning packet, lower heat and let sauce thicken a bit
Add cheese right into the pan...I probably use about 1/2 a cup, you can use more if you like.
 stir, set on low
take crescent rolls triangles apart and start spacing them on your round.... start like this and then fill them in evenly, making sure they all lay the same direction.
Notice that I laid the second layer just a bit lower than the first, giving me a bigger surface to add the meat to later
I use a roller to seal the edges, but you could use your fingers to do the same thing
Scoop the taco meat/ cheese mixture (now a bit thicker) evenly around the dough (I use an ice cream scoop) and then start to fold the "point" of the triangle over and tuck it back into the dough in the center of the circle...
It will look like this when you put it into an oven set for the temp your crescent rolls call for (mine is 375);  Bake for 20 minutes, until the crust is thoroughly cooked (especially under the meat) and brown.
 Like this :)
Serve with your choice of sides....I usually serve with Texas Caviar, but here I just had avocado, sour cream, corn (cut off the cob), and salsa. (If you have it, have some "Jack's Salsa" for me!!)
Serve, and in no time at al, plates will look like this!
Mmmm, YUMMY!
Even my kids like it.... All of them!
Yep, it's that good!
